Gen says, "Don't eat cheap sushi". I agree. I had never heard about the carbon monoxide process before, but it make me not want to eat cheap sushi even more. On the other hand, I guess some places could start raising prices and still serve crap.

Just know your good places, cheap doesn't necessarily mean crap. I have a few good sushi joints here in Tsukuba on my list and regularly enjoy sushi for decent prices.

I think it depends on where you live and how good the local fishing industry is, too... the sashimi we used to buy in grocery stores in Toyama Prefecture tasted better than stuff I had in good restaurants in the Kanto region...

I think they'd be better off having some kind of random testing program (maybe they already do) where they do quality checks on sushi restaurant fish...

Poison or no, bargain basement kaiten sushi in Japan has to be better that the 2-day-old market sushi they sell here on the US west coast. :)

We have more than a few good sushi restaurants here in Vancouver, and there is one Japanese grocery store that has good stuff for a reasonable price... it's easily better than similarly priced kaiten fare in Japan, but it's more of an exception than a rule.

I can't stand some of the awful stuff my friends who haven't lived in Japan like...
I have a Chinese Canadian buddy who loves this all-you-can-eat sushi place with Chinese chefs... a lot of people here are probably so used to heavily seasoned food that they don't really understand the subtleties of one place's fish and rice over another.

I can't get through to him that it's not good. I think the commoditization of sushi has brought the average quality waaaaay down....

Moral hazard comes to haunt us again.

The other thing is never eat at an 'all you can eat' sushi bar.

I'm officially scared to eat sushi in the US now. :( Unless someone can recommend a place in the Boston area? Or maybe I should just avoid the tuna.
